This recipe is a low carb, lean, tasty, sweet desert snack that is excellent to have stocked in the fridge. It serves as an excellent breakfast, snack and desert. It tastes very similar to a tapioca pudding and satisfies with no guilt ingredients.
Put everything in a blender except the chia seeds. Blend well.
Put in container for the fridge. Add chia seeds and stir in. Taste for sweetness.
Cover and let chill for at least several hours or overnight.
