This sandwich is crunchy, tasty and so satisfying. It's loaded with flavor, has plenty of variety options and can be made in bulk easy. This sandwich makes a perfect go to grab food, can be placed in a zip lock for travel and quickly satisfies hunger. It's also healthy and packed with protein. The instructions are geared to make a batch of at least 8 but just one of these has only 44 calories.
Peel cucumber. Slice length wise and then in half making at least 8 thin rectangle shaped slices.
Cook at least 4 strips of bacon. I prefer baking an entire sheet of bacon on a foiled baking sheet at 370 degrees for 20-30 minutes to make bulk and save time. After the bacon is done baking, place on a plate lined with a paper towel to press out excess grease. Cut long slices in half to make 8 halved pieces.
Take out the deli turkey. Lay the cucumber slices flat. Lay a slice of turkey on one half of cucumber along with the bacon. Place the second cucumber slice on top to close the sandwich. Makes at least 8.
Flavor Variations:
You can add mayo, avocado, salsa, pepper, cayenne or other spices to this sandwich if desired but even with no seasoning at all this makes a great, quick sandwich and is packed with flavor due to the turkey and bacon. If you want a no drip, non messy on the go sandwich keep it simple with just the cucumber and meat.
