Chop celery & place on bottom layer of slow cooker.
Place roast meat in skillet pan. Generously season with salt and pepper and sprinkle 1/4 cup of almond flour on top. Flip and repeat on other side of meat. Let sear for 6 minutes per side. When done remove from skillet and place on top of veggie layer in slow cooker. Sprinkle with Rosemary & Thyme.
Saute chopped onions, garlic & mushrooms in butter on skillet. Add 2 tbs almond flour, 1 tbs tomato paste & chicken stock. Simmer for 5 minutes. Pour on top of pot roast in slow cooker. Cover. Cook on high for 6 hours or on low for 8 hours.
If you need to make a "kid friendly" version add a baked or mashed potato to theirs. You can also make garlic bread to add carbs for non-keto eaters. A salad compliments all.
