Quick Easy Keto Pot Roast

Ingredients

  • 5 lb Beef Pot Roast Package of Cubed Beef Pot Roast
  • 4 shakes Salt & Pepper to Taste
  • 1/2 cup Almond Flour
  • 1 cup Sliced Mushroom
  • 1 med Onion
  • 3 cloves Garlic
  • 3 stalks Celery
  • 1 tsp Rosemary
  • 1 tsp Thyme
  • 2 tbsp Butter
  • 1 tbsp Tomato Paste
  • 3 cups Chicken Stock Can use 1 tbsp chicken bouillon + 3 cups water.

Instructions

  1. Chop celery & place on bottom layer of slow cooker.

  2. Place roast meat in skillet pan. Generously season with salt and pepper and sprinkle 1/4 cup of almond flour on top. Flip and repeat on other side of meat. Let sear for 6 minutes per side. When done remove from skillet and place on top of veggie layer in slow cooker. Sprinkle with Rosemary & Thyme.

  3. Saute chopped onions, garlic & mushrooms in butter on skillet. Add 2 tbs almond flour, 1 tbs tomato paste & chicken stock. Simmer for 5 minutes. Pour on top of pot roast in slow cooker. Cover. Cook on high for 6 hours or on low for 8 hours.

Recipe Notes

If you need to make a "kid friendly" version add a baked or mashed potato to theirs. You can also make garlic bread to add carbs for non-keto eaters. A salad compliments all.
